Whole Wheat Banana Bread
I think most families have at least one member that makes a good banana bread, and they pass on that recipe. My mum does make delicious banana bread, based on the standard recipe in the Joy of Cooking. I wanted to develop my own though, and of course decided to make it with whole wheat because I try and make everything with the most flavour and nutrients possible. I’ve come up with a pretty delicious recipe, the loaf is quite sweet, dense and moist, so more of a dessert than a breakfast option or snack. I’ve been wondering about substituting the sugar with Splenda but am scared it won’t be as tasty, so if anyone has experience with that please share.
Ingredients:
-1 cup sugar
-3 small very ripe bananas
-2 cups whole wheat flour
-1 egg
-1/2 cup canola oil
-1 tsp. baking soda
Directions:
-Preheat oven to 350F and grease baking tin
-Mash bananas in medium sized bowl and set aside
-In a large bowl, mix sugar, oil and egg until creamy
-Blend in mashed bananas and stir until all lumps are gone
-Add flour and baking soda, mix well
-Pour into tin and bake for 1 hour. Serve warm!

I suck at banana bread. SUCK. I can never get the middle to cook! But this looks like a good recipe… I shall try.
Yes, try it! This recipe is very easy and takes no more than 10 min to whip up.
I think that the magic is all in the mold. Fudgie makes the best banana bread ever!
Ilove this recipe being a diabetic I use Splenda in place of sugar and it is delicious.
Thanks, I’ll give it a try next time with Splenda. I made the subsitution recently in my Hemp muffin recipe and it was just as tasty.
